    Speak to the steward of Winterfell in Dragonsreach keep (should be standing on the steps in front of the Jarl - as long as you have advanced the story to the point of buying a house).

    It'll set you back 5k gold bits and then there are 7/8 upgrades that you can purchase for 200 - 300 gold bits each.

    My horse decided to attack some bandits. I ended up backstabbing my horse. Killed it, got a sneak improve but couldn't be arsed reloading and running back so I led the horse die.

    Got 2 horse meat out of it.
